1. The fish eggs are central

Taramosalata is a tarama-based dip, salted or otherwise processed, with a carrier such as bread or potato. Therefore, the Dutch words "fish salad" and "pink dips" tell too little. A natural colour can be pale or beige; bright pink proves no higher quality. [I18]

Check the label of the calf product. Composition, salt and any colouring matters differ. Use a product suitable for direct culinary processing and follow the storage instructions. This chapter gives no method to preserve raw fish gut itself. Careful cooling and hygiene rules apply to fish products. [I14]

2. A little product can do a lot

First taste on salt before adding other salty ingredients. The intention is a recognizable calf smell in a balanced dip, not a bowl in which lemon and salt overwhelm everything. A well leaked base makes the result more predictable.

With bread you pay attention to the amount of water consumed. With potato on tar and texture. Those two bases are not interchangeable without adjustment. If you use an existing recipe card, it is best to keep the basis described there.

3. Adding oil and assessing structure

Work gradually as you mix oil through the masses. In between, look for consistency and mouth feeling. A too thin mixture does not automatically improve by turning longer; check that there was already too much liquid in the base.

Make a small trial portion when using a new brand of tarama. Then review a bite with the bread you're serving. The salt and the dryness of the bread change the impression of the dip.

4. Allergens, fasting and storage

Fish is an allergen; a bread version usually also contains gluten. Do not assume that a dish without meat is therefore suitable for any vegetarian, vegan or religious way of eating. Ask for the concrete ingredients and wishes of the eater.

Keep the dip refrigerated, serve a small amount and follow the shortest applicable storage advice of the products used. [I17] A scent test alone cannot confirm safety. The most important colour misunderstand remains simple: the quality is in product, treatment and taste, not in the brightness of the pink.
