Understanding garlic dip with potato or bread: carrier, dosage, adding oil and storing structure.

1. Garlic needs a carrier
Skordalia is a family of garlic preparations in which, among other things, potatoes or bread can form the basis. Also nuts are found in variants. The potato version of Argiro shows one concrete Greek version; it is not proof that each family uses the same recipe. [I13]
The carrier determines a lot. Potato gives a different mouth feeling than soaked bread. Add your walnuts, then both taste and allergen information changes. Therefore, when serving, rather name the base used than only perform traditional garlic dip.
2. Feeding the garlic
A big toe isn't always as strong as a small one. Begin controlled and test after the mixture has stood. Raw garlic can show itself more clearly than you expected during the first mixing. Extra lemon doesn't automatically soften the garlic taste.
Remove hard or unpleasant parts and work with fresh, suitable product. Extremely fine rubbing divides the smell more evenly than leaving coarse pieces. Keep a small amount of neutral base in hand when experimenting.
3. Binding without glue
Boil potato fully cooked and drain well. Work carefully when grinding: Long-term aggressive rotation can give an unpleasant sticky structure. Oil is gradually added, while judging whether the mass is still coherent.
A bread version demands attention for how much water the bread has absorbed. Do not pinch the feeling of each batch until exactly the same drought when the loaves differ greatly. The dip should eventually become pleasantly spreadable, not only on paper contain the correct amount of oil.
4. At table and in the refrigerator
Skordalia can be used with fish or vegetables; try a small amount of fried cod and another next to cooked beet. This way you can discover how the environment affects the garlic. The recipe collection also contains cod with skordalia.
Store prepared product refrigerated and cool residues quickly. [I17] A raw egg is not a requirement for the concept of skordalia; do not add it without reason. The chapter describes techniques and variants, not a mandatory family recipe. Bread brings gluten, walnut nuts; state what's really in your bowl.
