1. Small leaf, clear texture
Purslane, glistrida in Greek, has fleshy leaves and juicy stems. It's something other than any mixture of wild leaf vegetables. The Greek product tradition around green is wide; the official Cretan guide treats green vegetables and herbs as its own cuisine world. [I10]
Preferably use grown postelein from shop, market or own controlled cultivation. A photo and a Greek name are insufficient to identify yourself collected plants safely. This chapter is a kitchen guide and not a determination key for game picking.
2. Buying, washing and drying
Choose fresh leaf and remove weak or damaged parts. Rinse carefully, because soil can remain between small branches. Let it leak well before you mix it in a salad. Depending wash water dilutes a carefully made dressing.
Also taste a clean piece of stem. Young, tender parts can easily snap; tougher pieces cut you smaller or leave you out. Everything up to the same fine snippets chopping takes away a part of its own character.
3. For tomato and yoghurt
Tomato, cucumber, olive oil and a modest amount of acid form a useful starting point. Add salt with attention only when cheese or olives are included. The juicy leaf does not need a heavy layer of dressing to remain recognizable.
Another tasting is a little finely chopped poselein by ordinary yogurt with a few drops of olive oil. First taste without garlic. Then you can add scent very gradually. So you notice whether the vegetables still play a role or only provide green dots.
4. Short advance work
Do not wash the green days in advance and then put it away moistly. Keep the refrigerator and packaging in mind and follow the product advice. Mix a salad preferably shortly before eating; salt and acid change during standing the texture.
A postelein plate doesn't have to be a historical reconstruction to fit into Greek cuisine. Just name your own combination as a serve proposal. The value of the ingredient is here in juicy, freshness and contrast, without health promises that a separate leaf cannot deliver.
