1. A fruit with multiple voices
Pomegranate brings crispy seeds, juice and a fresh sweet and sour touch. The Cretan product guide explicitly places fruit in regional cuisine. [I11] This chapter deals with practical use of the fruit, without presenting a specific salad as the only traditional way for the whole of Greece.
Fresh seeds, pure juice and pomegranate melasse are different ingredients. A bottle of syrup can contain extra sugar and a strongly boiled product can be much more intense than a hand pit. Check the composition before you replace anything.
2. Cleaning without haste
Wash the fruit on the outside, cut gently and divide it into manageable parts. Untie the seeds without taking the bitter white water generously. A deep bowl helps against flying juice; work on a surface that can withstand stains.
Taste a few naps. Some lots are clearly sourder or have firmer seeds than others. That determines whether you use them as a small accent or like a larger amount in a salad.
3. Hearty combinations
Try a modest hand with a salad with green leaves, some onion and a soft cheese. Build the dressing separately and take into account the acid of the fruit. Extra lemon is not always necessary. With roasted aubergine, the seeds can add texture to a further soft dish.
Don't let a first trial disappear under lots of honey and nuts. Start with a simple combination and then add one element at a time. This way you can also discover whether the seeds have real added value or only color.
4. Juice and molasses
A concentrated product can be added to a sauce drop by drop. Do not use it as an automatic replacement for wine vinegar: acid, sugar and thickness change simultaneously. When baking or grilling, a sweet layer can quickly darken; if necessary, finish at the end.
Store cut fruit and loose seeds refrigerated according to product and food safety advice. [I17] A dish that has been on a hot table all afternoon does not get fresh again because you put it back in the refrigerator later. Put down a small portion and make up if necessary.
