01 · FLOOR

Sweet is more than a dessert

A small piece of cake with coffee, a spoon-in-flavored fruit, a warm dough ball with honey: sweet can appear at different moments. By looking at the moment you also understand the portion size.

Taste one species consciously instead of finishing a whole plate quickly. Look at what the taste is like: dough, dairy, syrup, nuts or fruit. That makes it easier to recognise another product with a similar name later.

02 · FLOOR

Baklava: layers, nuts and syrup

Baklava connects thin layers of dough with a nut filling and syrup. Which notes, which form and how much herbation are used, differ. The interesting thing is the ratio between crisp, juicy and aromatic.

For home use you use a full recipe, such as the existing walnut version in the guide. Work with a dry enough nut mixture and follow the indicated combination of pastry and syrup temperatures. The general slogan hot on cold does not replace the details of a specific recipe.

03 · FLOOR

Galaktoboureko: cream between layers

Galaktoboureko combines filo with a milky or semolina-like filling and syrup. It requires attention for both a stuffed filling and baked dough. A beautiful golden brown top layer alone does not tell whether the inside is good.

Let the filling process as prescribed by the recipe; a hot or very liquid mass can influence the layers differently. At a first attempt, choose one reliable recipe version and do not change tin size, layer thickness and amount of syrup at the same time.

04 · FLOOR

Loukoumades: small, warm and airy

Loukoumades are small fried dough preparations that are often served with honey or syrup. A good portion does not have to be large. The contrast between a warm outside and a light inside makes a small bite interesting.

For frying, a suitable pan, controlled oil temperature and small portions are important. Do not work with an overcrowded pan and keep moisture out of hot oil. Follow a full recipe and the instructions of your frying equipment.

Kalitsounia and lychnarakia

In Crete small cheese cakes take their own place. The shape and name tell something, but filling and sweetness may differ. Ask for the cheese and cinnamon if you purchase.

First taste a bite from the edge and then from the middle. The dough and the filling each give a different part of the experience. The existing recipes for kalitsounia and lychnarakia are good comparison points within the guide.

06 · FLOOR

Lepelsweet: fruit as a small reception

Glyko tou koutaliou, spoon sweet, is not a big bowl of jam to eat thoughtlessly. The idea of a small sweet portion makes fruit, peel or any other raw material very strongly present. Water or coffee can be next to it.

Choose one small portion for an unknown species and ask what you taste. Peel, wick and flesh behave differently. For home preparation, follow a validated storage method recipe; a sugar content does not prove safe shelf life.

07 · FLOOR

Honey, cinnamon and citrus

Honey can sweeten at the same time and add its own aroma. Cinnamon gives a warm accent and citrus can bring smell or acid depending on peel or juice. Do not automatically use them all in generous amounts.

Taste a small piece of pastry first bald and add a little honey to a second bite. Then decide if the addition helps. A good combination allows several parts to remain recognizable.

08 · FLOOR

Rizogalo: attention to soft texture

Rizogalo is rice pudding. The dish seems simple, but rice type, moisture and cooling determine the structure. A pudding that looks warm thin can be firmer after cooling.

Follow the rice pudding in the recipe guide and divide into small portions. Give cinnamon separately if you want to compare the milk and rice flavour. Cool and store according to the food safety advice for cooked rice and dairy; do not leave the dish warm all evening.

09 · FLOOR

A small trial next to coffee

Make a tasting plate with one crunchy, one creamy and one fruity part. Cut the portions small and serve water. Take a bite first, then a sip of coffee, and watch how bitter and sweet change each other.

You don't have to fill the board with all kinds of garnish. A simple format shows what it is about: layers, filling and texture. For a family table you can share one pastry and each give a small bowl.

Sweet words and ingredients

Μέλι Oh, honey. Κανέλα Cinnamon. Καρύδια Oh, walnuts. Αμύγδαλα .. almonds. Κρέμα cream, depending on the product. Question: Περιέχει ξηρούς καρπούς; . . . Does it contain nuts?

Filo, nuts, egg, dairy and sesame are present in different products. Check ingredients in case of allergy; what is visible on the top does not tell everything. From this page, go to the bakery, coffee and herbal book for the consistency of the meal.
