The supply closet as the second season
On a shelf, several moments of the year can stand side by side: olives, dried fruit, honey, a jar of jam and a small bowl of fruit in syrup. Such a storage cabinet is a way to distribute abundance. She also tells something about taste: acid in fat, sweet in bitter, something solid next to soft bread.
The Cretan product kitchen includes olives, fruit, vegetables, honey and herbs. In the recipe collection of the region you will find capers such as tursi and walnuts as spoon sweet. This chapter connects these products with ways of preserving. It does not give a universal method by which any ingredient can be unlimited in a pot. [1–2]
Start at home small. Buy good edible olives, choose one honey and serve dried fruit next to cheese. You also get to know the pantry by tasting. Self preserving becomes interesting only when you know exactly what process you are following and how to store the product afterwards.
Five conservation methods to keep apart
| Method | What's changing? | What's next? |
|---|---|---|
| Pickle and debit | An olive is suitable as table olives by a treatment chosen. | Debiting and safe storage are not the same step. |
| Ferment | Micro-organisms change components, for example to acids. | Ingredients, salt, time, temperature and storage are part of one tested process. |
| Lacquer in acid | Vinegar or any other prescribed acid is added. | A sour taste doesn't prove that the whole pot is safe to keep. |
| Drying | Water is being extracted. | The product must be sufficiently and evenly dry and remain dry. |
| Jams and syrup fruit | Fruit is processed with sugar and an appropriate treatment. | Sweetness or a closed lid alone does not guarantee any shelf life. |
A pot can combine several techniques. That does not mean that you can merge steps from different recipes. For stock outside the refrigerator, use a complete, up-to-date and tested recipe for exactly the product and the size pot. A refrigerator preparation is not an alternative label for an unproven sustainable preserve. [3–6]
Olives: from bitter fruit to table fruit
A freshly harvested olive is different from the olive from a dish at the meal. Debit can be done through various treatments, including water, brine and dry salt. The method also determines the final bite and taste. The University of California guide describes separate processes; their proportions and times are not interchangeable. [3]
Ελιές "Oliës eliés' are olives; άλμη - allmi - is brine. τσακιστές However, a contusion is not a conservation method in itself. Ask if the product is already ready to eat and how to store it after opening.
Self harvested olives require a documented approach. Note variety if known, ripeness, starting moment and method used. Choose one complete, reliable procedure and stay with it. This chapter does not knowingly give a loose . . handful of salt per pot . .
A taste test without any preparation
Place three types of ready-to-eat olives in separate dishes. First, taste without additives and compare bitterness, salt, firmness and aroma. Then, only Marinate the portion you're going to eat directly with some olive oil, washed lemon peel and oregano. Use clean cutlery and keep the rest chilled according to the label. The marinade will no longer keep the olives.
Tursi: acid is a taste and a process
Τουρσί You can recognize toursí . The name does not tell whether a product has become acidic due to lactic fermentation or is prepared with vinegar. Ask how it is made. The distinction helps to understand a taste and not to make wrong storage assumptions.
In vegetable fermentation, food-suitable materials, the required salt content, immersion in brine and controlled conditions are important. Gas must be able to escape safely; simply screw a pot during an active process can build pressure. BCCDC's directive discusses these process conditions. This is background information, not an independent fermentation recipe. [4]
If you want to start with it, choose one tested vegetable recipe from a food safety source and follow the instructions for cooling and any further processing. Do not replace salt with less salt and do not change the amount of vinegar to make the .
Use at table
A small bowl of purchased tursi can be enough besides lentils, beans or a bread meal. First, drain well and taste before adding extra salt to the dish. Do not automatically use the brine as a universal starter for a new pot. Make tasting a comparison: crispy or soft, sharp acid or round, with or without spicy background.
Fruit drying: less water, more attention
Σταφίδες The following shall be added to the list: αποξηραμένα σύκα Their ingredients are: in a salad, in a soft cheese or in a small bowl of coffee. Cut large pieces small so that their sweetness is distributed over the dish.
For self-drying, a food dryer gives more control than an improvised tray in the sun. Follow a product-oriented drying instruction. Allow fruit to cool completely before packaging: hot-packed fruit can cause condensation. Store it dry, cool and dark in suitable packaging. Check for re-recorded moisture during storage. [5]
The NCHFP describes the conditioning of cooled fruit, with daily control and drying in condensate. This is part of the complete drying instruction and is no way to restore corrupted fruit. Note product and date of drying; rather make small packages that you use in one or a few meals.
Jams and spoon sweet: two different textures
Μαρμελάδα "Marmeládha' is jam or marmalade. γλυκό του κουταλιού The Greek name literally means a sweetness of the spoon. It is a small, concentrated taste experience. Among other things, the region mentions walnut as an example. [2,8]
A nice jam is based on an appropriate ratio of fruit, pectin, acid and sugar. Using less sugar changes the recipe: choose a variant developed for that. A drop of lemon on feeling and a hot reverse pot together do not constitute a proven storage method. Follow the prescribed pot size, processing and adjustments for height from the chosen recipe. [6]
When molded on jam, remove the entire contents; not only do you scoop away the visible area. After opening, the label or recipe apply and the corresponding cooling. Use a clean spoon. An authentic appearance, a handwritten label or a lot of sugar does not automatically make a product safe.
A simple dessert from the pantry
Divide 300 g of Greek yogurt over two bowls. Add a small spoon of syrup fruit and possibly some roasted nuts. Keep fruit and syrup apart first: so you can dose yourself. Serve immediately. This is a serving idea with an existing product, not a recipe to make syrup fruit.
Honey: tasting with a clean spoon
Μέλι "Mili' or "Mili' is honey; θυμαρίσιο μέλι Thimarísio méli .. indicates thyme honey. Compare smell, sweetness and aftertaste, preferably first on a neutral spoon. Then you can taste with yoghurt, bread or cheese. Ask a producer about the origin and harvest instead of just looking at the colour.
Store honey tightly sealed and dry; follow the label. Do not give honey to children under one year old, even by hot porridge or tea. Adding honey to a homemade mixture does not automatically make that mixture sustainable. [7,9]
A safe shelf: label, date and storage space
According to the Food Centre, you can store homemade products with garlic, herbs or vegetables in oil for up to four days at 4 °C. For long-term storage outside the refrigerator, your own oil pot is not a safe beginner's project [7]
Storage advice is part of the entire product. Write on a label that is in it, when it is made or opened and whether it needs to be cooled. Return refrigerator products immediately after use. Distince between a professional unopened product, an open pot and a private experiment.
Do not taste suspicious preserved foods. A ball of lid, leakage or mold is reason not to use the product; absence of visible defects does not prove safety. The Food Centre advises home weaving of vegetables and meat. Use an appropriate safe storage method for these products, such as freezing according to product advice. [7]
Make your storage cabinet a small archive of flavors. Write down with a pot also producer, region and what you ate there. Thus, the collection grows with your travels, without any discovery immediately becoming a homemade shelf life project.
