1. Twice baking, many ways of eating

Paximadi is hard, dried bread; paximadia is the plural. In Crete, such a bread forms a basis for roofingot. The regional product guide treats bread and rusks as its own part of the kitchen. [I07] There are different forms, cereal mixtures and hardnesses.

That makes it useful to look at a biscuit first without siege. A thick barley biscuit requires something other than a thin crispy piece of wheat bread. The name "traditional" does not yet tell you how much moisture the inside will absorb.

2. Wetting with policy

The goal is usually a bite that eats pleasantly, with enough structure under tomato and oil. Make the bread short moist when needed and let the tomato do further work. Long weeks before juicy siege comes on, the soil can make mushy.

You can't soften a very dry piece with a hard spoon. Just give me a minute to get some fluids. Check the bottom and break down a piece to assess the structure if necessary. The desired result also depends on when you serve the dish.

3. The bread as an ingredient

Crumbles can give a salad or vegetable dish texture. Only add them late when you're looking for crunchiness. Do you just want them to take tomato juice, mix it earlier and taste again after a few minutes. The same crumb thus fulfills two different roles.

Look at the cereals and any oil, sugar or carob addition when buying. Barley and wheat contain gluten. A dark colour is not proof of a specific composition; the label tells more than the picture on the package.

4. A small roof ossification test

Put two similar pieces on separate plates. Make one short moist and leave the other dry. Divide the same amount of grated tomato and oil over both and wait for the same time. Then compare the first bite and the bottom. That's how you find an approach that fits your brand.

Store dry bread dry and tightly sealed. Cozy dabos is a fresh dish: tomato and cheese change the storage situation. Keep an old supply closet tradition and a prepared lunch therefore apart.
